The two things that make Dexter’s cake such a marvel is its originality in design and the workmanship that goes into each piece. Like every artist, Raymond begins the creative process by putting his design on paper. Here, he sketches each tier, every detail – from the largest flower to the most intricate lattice pattern. Details such as color and texture are then added to complete the look.
From the design, his skilled team works tirelessly in ensuring that the sketch is brought to life in the most faithful way possible. The fondant icing is smoothly and evenly placed on the cake. Sugar flowers are intricately designed and formed. Piped designs are carefully swirled onto each tier. And sugar decorations are molded, hand painted and assembled to achieve a detailed look. The result is a memorable handcrafted masterpiece.
One example of such excellent craftsmanship is their wedding cake entitled “Vigan.” Named after one of the famous Spanish Colonial cities of the country, each layer of the three-tiered creation is a study in masterful artwork. The panels are designed after the “bahay na bato” (stone house). Windows made of “capiz” or the local shell are echoed in the panels that support the tiered cake. Clay jars and wooden benches adorn each layer. And Vigan tiles line the top of the cake to guide the bride and groom as they reach the top layer.
Not content with the usual designs, Raymond often goes beyond traditional round or square tiers when conceptualizing his creations. He experiments in shapes, textures, colors and form. One of his more popular designs, the “rose cake” is a three-layer cake designed to look like roses in bloom. As a whimsical detail, handmade sugar angels are playfully scattered on the cake.
The Flamingo wedding cake is one of their first award winning designs and one of the most popular choices. The first layer serves as the base and the second layer is designed as two flamingos, caught in a romantic stare. The top layer features the rings that symbolize their love.
Another original design is the Petal cake. Reminiscent of the film American Beauty, it uses red rose petals as the main design theme. It is generously sprinkled to cover the 4-tiered cake.
These are but a sampler of the range of creations that Dexter’s has been known for. Not surprisingly, each cake is unique, with a distinct character that sets it apart from the rest. This passion for originality serves as the impetus for Raymond to create more impressive cakes, one after the other.
